福竹ファームでは、セイロンウリが今年も実りました。
昔はヘビウリと呼ばれ、沖縄では栽培されていたようです。
しかし、関西では馴染みがなくあまり人気がありません。
健康野菜として知られており、ミネラルタップリ野菜です。
大まかにいえば、癖のないゴーヤみたいな野菜です。
家では、「甘酢漬け」や「浅漬け」で食卓にのぼります。
そこでセイロンウリの代表的な調理法をご紹介します。
セイロンウリ、別名ヘビウリの代表的な調理法は、以下の2つです。
セイロンウリは、煮物にすると、シャキシャキとした食感と甘みが楽しめます。
【材料】
* セイロンウリ 1本
* 水 500ml
* 醤油 大さじ2
* みりん 大さじ2
* 砂糖 大さじ2
* 酒 大さじ1
* 生姜（すりおろし） 小さじ1
* にんにく（すりおろし） 小さじ1
【作り方】
1. セイロンウリは、皮をむいて乱切りにする。
2. 鍋に水、醤油、みりん、砂糖、酒、生姜、にんにくを入れて火にかける。
3. 沸騰したらセイロンウリを加えて弱火で10分ほど煮る。
4. セイロンウリに火が通ったら、器に盛り付ける。
セイロンウリは、炒め物にすると、シャキシャキとした食感と甘みが引き立ちます。

* セイロンウリ 1本
* ごま油 大さじ1
* にんにく（みじん切り） 小さじ1
* しょうが（みじん切り） 小さじ1
* 卵 1個
* 塩 少々
* こしょう 少々
【作り方】
1. セイロンウリは、皮をむいて乱切りにする。
2. フライパンにごま油を熱し、にんにくとしょうがを炒める。
3. セイロンウリを加えて炒め合わせる。
4. 卵を割り入れて炒め合わせる。
5. 塩こしょうで味を調えて、器に盛り付ける。
